Chicken Nachos

In honor of National Nacho Day on Sunday, I had the inspiration to make my own nachos. Nachos are one of my favorite meals, unfortunately most restaurants add on a lot of things that I hate {picky eater coming in to play}. When I'm lucky to find nachos where I don't have to ask for a lot of things to be left off, I am a happy camper.  However, homemade nachos are the best simply because you can make them however you want! Here's how I make my favorite nachos. Please note, nacho cheese {yuck!} is not used.

What you'll need:

  • Chicken
  • Shredded cheese
  • Tostitos chips

Optional:

  • Bacon bits
  • Olives
  • Avocado
  • BBQ sauce
  • Sour cream

Chicken nachos:

One | Preheat your oven

Preheat your oven to 400* degrees.

*Each oven is different and the degrees may vary

Two | Prep the chicken

I like to cook with chicken tender strips a lot because it's the perfect amount of chicken for my meals. If you're not planning on using BBQ sauce, I would season the chicken for a bit of flavor. However, if you're using BBQ sauce, leave it unseasoned. After cooking the chicken for 20 minutes, dice the chicken and mix in BBQ sauce.

Three | Layer

Layer chips on the bottom of your pan. Add cheese, bacon bits, olives and chicken. Sprinkle cheese on top. Add another layer on top and repeat the toppings. Add extra cheese to the top to make it extra melty.

Four | Cook

Pop your pan back into the oven and let it cook for 10 minutes. This will ensure the cheese is melted on both levels. After the 10 minutes are over and your cheese is melted, add avocado* to the top.

*Unfortunately, I forgot to buy avocado and did not get to add it this time, but it's DELICIOUS!

Five | Pair with sour cream + ENJOY!
