Shrimp Quinoa Zucchini Boats

I decided to make zucchini boats this week. After perusing ideas on Pinterest, I came up with a shrimp + quinoa concoction. The dish takes some time to make, as you have to scoop the insides out of the zucchini. However, this dish is totally worth it. It's so delicious.

What you'll need:

  • 1 zucchini
  • 1/2 cup quinoa
  • 8 shrimp
  • Dash of cheese {optional}

Shrimp Quinoa Zucchini Boats:

One | Cut your zucchini in half

The most crucial part of creating your zucchini boat - cutting it in half! I always find it impossible to cut my zucchini perfectly in half. One half is always larger than the other, but it will work!

Two | Scoop the insides out

Scoop the insides out of your zucchini! Leave a small rim to support your boat. Also be weary of scooping too much out - you don't want the bottom of your zucchini to fall out!

Three | Preheat your oven to 400 degrees

Start preheating your oven before you begin prepping your shrimp and making quinoa. While you're busy doing these things, your oven will be ready for you to use in no time!

Four | Cook your shrimp + quinoa

I find the best way to cook shrimp quickly is to thinly slice a couple of margarine squares, line them on the foil, then throw your shrimp on top with a bit of pepper. Wrap the shrimp in the tin foil and throw in the oven for 10 minutes. This gives the shrimp a little flavor and it won't dry out!

I made 1/2 a cup of quinoa - which was more than I needed. I figured I would be making this again at some point during the week or the weekend, so I made extra quinoa to have ready to go when I was ready. Quinoa is pretty simple. Add 1/2 quinoa to your pot, add 1 cup water, boil, reduce heat to a simmer and cover your pot with a lid for 15 to 20 minutes.

Five | Mix the shrimp and quinoa together

Toss the quinoa and shrimp around a little - don't let it fall out of the bowl. It's a sad day when precious quinoa and/or shrimp is wasted! Once you've mixed it all together, add the mixture to your boats!

Six | Cook your zucchini boat for 30 minutes

Before cooking your boats, add a little cheese to the top of the boats. It makes it better, trust me. Cook your zucchini boats for 30 minutes. This will allow the zucchini to become soft and easy to eat!
