Cheesy BBQ Bacon + Olive Chicken Egg Rolls

I am not a fan of egg rolls from the Chinese restaurant - often because I'm picky about what's in them. Yes, I wish I were not as picky, but I don't know if I can change. As I was thinking of something new to make, I thought about egg rolls and how I wish I could have them with something I wanted in them. I decided to attempt to make these Cheesy BBQ Bacon + Olive Chicken Egg Rolls. They were surprisingly delicious! Find out how to make them yourself!

What you'll need:

  • 2 dashes of Mozarella cheese
  • 2 Egg wraps
  • 2 dashes of bacon bits
  • 2 dashes of sliced olives
  • BBQ sauce
  • 2 Chicken tenders

Cheesy BBQ Bacon + Olives Chicken Egg Wraps:

Step One | Cook + BBQ your chicken

Preheat your oven to 400 degrees. Season your chicken tenders with the seasoning you like best. Bake two chicken tenders for 20 minutes or until finished cooking. Once they are done, dice your chicken. Layer the bottom of your bowl with BBQ sauce. Throw your chicken on top and mix until you are satisfied with the BBQ sauce ratio on your chicken. If you need extra BBQ sauce, drizzle a little more and continue mixing.

Step two | Add chicken to the egg wrap

Once you have BBQ sauced your chicken, add it to the middle of your egg wrap. You'll want to place it in the middle because it will be easier to roll it once you have added everything.

Pro tip: Egg wraps are usually located in the produce section next to the tofu. I looked all over the store twice before I eventually found it.

Step three | Add bacon bits

Add a couple pinches of bacon bits to your chicken. For bacon bits, you can buy the pre-made bag or container at the grocery store. Or, if you're really in the cooking mood, buy your favorite bacon and fry a few pieces. Once they are finished, let them cool and break the bacon strips into tiny pieces making your own bacon bits.

Step four | Add olives

Add a pinch of olives to the mix. You don't need to many, just a nice little layer over the top.

Step five | Add cheese

Add a couple of pinches of mozzarella cheese to the mix. It's okay if the cheese spills over, it will help make it cheesier when you're ready to eat!

Step six | Roll the wrap

Once you have added everything, roll up the wrap. You'll want to fold the bottom corner over the insides first. Fold the sides then continue rolling until the top corner is wrapped underneath. The roll will look like a mini burrito.

Step seven | Add olive / vegetable oil {optional}

Add a little olive / vegetable oil to the top of the wraps before placing in the oven.

Step eight | Cook

Cook the egg wraps for 20 minutes or until golden brown.

Step nine | Eat up!

Once the egg wraps are done cooking, let them cool down a bit. I made the mistake of eating mine a little too quickly once they were done and burnt my tongue. I paired my egg wraps with baked green + yellow squash, cauliflower, and broccoli, and a hardboiled egg.
