Welcome to the first Foodie Friday! Every Friday I'll be featuring a new recipe. The recipes will be solo eater recipes - recipes for one person. I always find recipes online for 2 or more people. There are hardly any recipes for people who need to make meals for one. I personally do not like making those meals because I have food for days that I either get tired of eating or it goes bad. My aim with Foodie Friday is to share recipes that you can make for one meal.
Without any further ado, here is the first Foodie Friday recipe: French Toast Roll Ups.
What you'll need:
- 8 slices of white bread
- 5 strawberries
- Strawberry cream cheese
- 2 eggs
- 4 TBSP milk
- 1 TBSP ground cinnamon
- 1/3 cup granulated sugar
French Toast Roll Ups:
Step One | Cut the crusts off your bread slices
For non-crust lovers, you'll love this. For crust lovers, sorry, but cut those crusts off!
Step Two | Flatten the bread
This step will be easy if you have a roller. I don't really roll things out, so I don't have a roller, so I used a cup. It served the purpose well.
Step Three | Cream cheese + fruit
I would spread about an inch of the strawberry cream cheese on the bread. I also chose strawberries as my fruit to add inside. I diced up a few strawberries and tossed them over the spread.
Step Four | Roll
It's time to roll the bread up!
Step Five | Whisk the eggs + create the sugar
Combine the milk + eggs in a bowl and whisk them together to make the egg mixture. Create the sugar mixture by combining the cinnamon sugar and granulated sugar.
Step Six | Create the french toast rolls
Dip the roll ups in the egg mixture. Place the roll ups in a buttered pan. Place the seams of the roll ups down in the frying pan. Fry each side of the roll ups until they are golden brown.
Step Seven | Roll in cinnamon sugar
Roll them in the cinnamon sugar mixture you created until well coated.
Step Eight | Time to eat!
